The test method developed by Prof. Purr in the 1970s detects the presence of lipase in dairy products and numerous other foods by means of discolouration on the test strip. With this method, an insoluble blue dye is formed on the filter paper at the corresponding site of enzyme activity in the respective medium when hydrolysis or lipolysis by esterases or lipases of various origins takes place optimally. The method has been developed decisively in recent years so that, for example, the reaction times have been shortened fourfold. The simple and fast handling of the test papers and the recognised, reliable detection of lipase activities make the method so efficient for industrial applications. This method, which is extremely simple for the user, is used to check the lipolytic spoilage of fats and fatty foods such as butter, bakery products, dried milk products and dried soups. It can be used to detect bacterial infestation on raw materials, equipment or pipelines. Likewise, there are specifications prescribed in the food industry to which the lipase-esterase test according to Prof. Purr belongs. Shelf life: stored dry, well sealed and protected from light, the test papers can be kept for several months at a temperature of 2°-4°C.
